Every Summer the 'costera' takes place in the cantabrian sea and the bonito is fished close to shore using pole and line fishing. This ensures selective fishing and reduced impact on marine ecosystems

This is such a prized delicacy in Spain it is known as 'chicken of the sea' for its flavour and succulence.

Our fav light lunch is new season spuds drowned in Vera's olive oil, scattered with sweet white onions, a smidge of sherry vinegar and good chunks of bonito.
