Guillen are an amazing family run outfit of producers from Guijelo- a tiny province in Salamanca that provides us with some of the most prized Iberico meats in Spain.

The pigs roam freely on the 'Dehesa' or pasture eating a mix of natural feed and acorns.

We love this shoulder cut which has a little more bite but also wonderful rich unctuos marbling and intense depth of flavour throughout.
