Guillen are an amazing family run outfit of producers from Guijelo- a tiny province in Salamanca that provides us with some of the most prized Iberico meats in Spain.

The pigs roam freely on the 'Dehesa' or pasture eating a mix of natural feed and acorns.

We love this shoulder cut which has a little more bite but also wonderful rich marbling and intense flavour throughout. 

This Paleta boneless shoulder comes unsliced and is approximately 2.15kg per unit. Great for slicing at home for a fancy shindig.

Ingredients: Iberian Pork Shoulder, salt, dextrose, antioxidants (E-331) and preservatives ( E-252, E250)
